Cajun Almond-Crusted Shrimp

 500 g large raw shrimp, peeled and deveined, tails on
 160 ml ground almonds
 80 ml tapioca starch, potato starch, or cornstarch
 15 ml Cajun seasoning
 15 ml lemon pepper seasoning
 3 eggs
 Cajun remoulade sauce (see recipe)

  1. Prepare the Shrimp:
    Pat each shrimp dry using paper towels or a clean kitchen towel. Set aside.

  1. Make the Coating:
    In a bowl, combine ground almonds, starch, and seasonings. In a separate bowl, lightly beat the eggs. Dip each shrimp into the almond mixture, coat well, then dip it into the beaten eggs. Finally, coat the shrimp again in the almond mixture, pressing gently to ensure an even layer.

    Spray the air fryer basket with cooking spray. Arrange half of the shrimp in a single layer and spray them lightly with cooking spray. Air fry at 375°F (190°C) for 5 minutes, flip the shrimp, spray again, and cook for another 5 minutes or until golden. Repeat with the remaining shrimp.
